Monday we had lemon butter cod with white rice and sautéed squash and zucchini from the garden. No picture because I decided to make this post on Thursday and planning isn’t always my forte.
Tuesday little peach and I made a homemade pizza with store bought fresh dough for the crust. I was limited on cheese so I tore apart some mozzarella sticks, diced up some cherry tomatoes we had on hand, opened a jar of marinara, and added fresh basil from the garden. It wasn’t amazing if I’m being completely honest but it was edible and not at all bad so I’ll count it as a win. The star of the show were the four portobello mushroom caps I had marinated on Sunday in Italian dressing. I forgot about them and refused to let them go bad and die in the back of the fridge so I pulled them out and covered them with Parmesan (there was some of that on the pizza too) and baked them with the pizza. We were literally fighting over the last bits. So good!
Wednesday was a late night. Hubs had work to do for his business (Turf Reaponders) so I fried up some squash from the garden and served that with Greek yogurt ranch dip. I made broccoli and cheddar rice mix too… while I waited for hubs to get home to grill up some steak. It was too late to grill when he got home so we opted to season and cook on the cast iron grill pan inside. A ton of smoke later and we had a delicious dinner at 9pm. We never eat that late and truth be told there were only a few squash pieces left by the time he got home. No picture because I clearly did not plan appropriately but it was delicious, all of it.
Thursday was another wonky day with Ham getting done camp late and having to rush to practice immediately after. I had already taken gulf shrimp out earlier in the day so I had no choice but to cook it. I opted for a quick lemon butter sauce (melted butter, garlic, paprika, salt, and pepper) added in some parsley – not from the garden, my parsley always gives up in the heat. Baked it with some lemon slices and served with leftover rice we had in the fridge. Everyone was happy and bellies were full. He did however miss practice because camp ran late but we are calling that a sign – a sign we all needed to slow down a bit.
Friday we had leftovers when we got home. The kids ate pizza at his camp graduation ceremony and we celebrated with rootbeer floats. You can’t go wrong with rootbeer floats.
Do you ever think it’s funny how certain foods bring back memories? Like the taste of a rootbeer float has me reminiscing of my grandpa. My dad’s dad. He would take me and my brothers to Stewart’s rootbeer and we’d all order what we wanted. That man never deviated from a California cheeseburger, onion rings, and a rootbeer float. He also never shared those onion rings with anyone but me. Those little things that make you feel special. Those little moments all come back and make me smile.
Well that was our week in food. Weekends don’t count it’s like wolves here all fending for themselves (I kid, I kid). Happy Sunday. Get some movement in and get enjoy some fresh air.
